Kiya's Handai
Handai, also called hangiri, is a tool used to cut and mix sushi rice. The wooden surface absorbs excess water from the rice, resulting in delicious, shiny sushi rice. This is a technique unique to wood that cannot be imitated by glass or metal bowls.
